We have the partition /var/log almost full and looking for large files I find the files that you can see in the attached image
I want to know if I can delete them, or which one I can delete. And if anyone could tell me what each one is, just for knowledge, I would apreciate it.

I would NOT delete anything with .dat extensions, as those are database files. Other ones should be safe to delete, but back them up first.
Just as a side note, I would be careful not to delete any files from below, as that would affect future jumbo fixes installs (it would most likely not work, as it needs those):

The Fresh install that you can see in the image was used for an old upgrade that we perform on the VM, can I delete it?

And just to know, It is normal that this file has remained there after the update?
I think so, Im pretty sure it is there, but I always delete it once version is installed, because it simply takes space on the device. I dont know if you ever worked with old Nokia appliances, but say if someone deleted CP package from one of those (specifically flash based), that would pretty much wipe out all the CP config. With Gaia, since all devices are HDD based, once its installed, you dont really need that package any longer.
CPUSE keeps all old packages, be it from upgrades, updates or Jumbo / HF installs. While e.g. your R80.10 upgrade package will only be used once as uninstall would imply a restore snapshot command, any Jumbo HF whose install package has been removed can no longer be uninstalled by CPUSE !
I see that cpview is large - you can follow troubleshooting from sk101878. Better not delete anything from the file system. Maybe here not the shown files take all the space...
