R81.20 and AWS ami
Not that I'm planning to do this but.... Is it true that now with the latest R81.20 AWS AMI, that we could theoretically update to a new major version like R81.30 or even R82.10 while still using the same AMI (not creating a totally new gateway)? Or is it still supported to only do minor updates like R81.20 JHF 26 to JHF 41 for example?

Please see sk177714 for more information on in-place upgrades for Cloudguard.

JHF installation has been supported for a while.
In-place upgrades to different versions have been supported from R80.30 in some, but not all scenarios.
https://support.checkpoint.com/results/sk/sk177714 explains the process and the configurations where this is supported.
I assume this will be available for future releases as well.
