what will happen to those permanent kernel values when upgrading gaia OS
The customer environment running on R80.10 and we are planning to upgrade OS to R80.30. But in the gateway there are some kernel parameters changed to custom values.( $FWDIR/boot/modules/fwkern.conf )
-SIP ALG inspection
-TCP out of state
-In Management Server user.def files
when we upgrade the Gateway OS what will happen to those permanent kernel values?

You‘ll need to backup those and verify them after the upgrade.

Any manual configuration file changes will need to be re-applied on upgrade.
For .def file changes, you may have to apply them in multiple places as you may need to apply them in one or more backward compatibility directories (depending on target gateway versions).
