I want to set it to 70GB+ for both system-root and Logs, but it won't let you. It doesn't matter what you put in there (i.e. <70GB) it always tweaks the values. What is this?
We reserve a portion of the disk for snapshots used during backup/upgrade operations.
It's usually between 2-3 times the size of your root partition.

Wouldn't it make sense to not do this goofy recalculation and just tell the user what needs to happen? Isn't it more important to have the system-root and logs partitions set to a larger size initially and up the reserves later via disk expansion?
More information should definitely be provided at this step, I agree.
Especially since the installer (at least in previous iterations) allows installation in situations where you haven't provided enough disk space to begin with.

I watched your video again and if you stop at 11 seconds, add all the values you get and it amounts to 299 GBs, so it all makes sense, as it shows disk size is 300 GBs.
