The Gaia installer should pick a sane default.
On my running R80.10 management in the lab, I'm using roughly 8GB but allocated 32GB.
You might allocate more or less depending on the size of your environment (mine is fairly small with just a couple gateways).
The majority of your space should go to the log partition.
In no case should the root partition be more than 2TB as the system will be unable to boot.
