How do I find my antivirus signature?

Why is this of interest?
In general, AV blade is leveraging ThreatCloud unless you've enabled Deep Scan in Threat Prevention, then there are signatures.

Because our customer don't want to update all of signature. We want to do review the signature and update specific signature what they needed.

Even where signatures are delivered to the gateway, which I believe only occurs if you’ve enabled Deep Scan, I’m pretty sure it’s not in a format you can review in any meaningful way.
You can manage exceptions via the Threat Prevention policy.
