Could I run 8 cpu cores with 2 licenses of 4 cores in a gateway?
Be aware you don't need to license all cores on a system, only the cores you want to handle traffic. If you're trying to get to eight cores because it's impossible to find good hardware with fewer today, you may not need to do that.
If you need eight cores of traffic handling performance, you will probably need to trade in the licenses for a bigger one.
Which type of gateway open server or VM and which license/SKU?
In the case of typical cloud licenses in theory this is possible provided the licenses are the same type making them eligible for use as a pool.

Run the specifics with account services but most likely you will need to take this with your local account team to find a solution.
As Chris said, I would definitely verify with Account services. They will confirm all of this for you.

Most likely this is going to require a trade-in of some sort, which means working with your local Check Point office.
