RHEL 7 is the recommended choice for R80.20+ Management, R80.40+ Gateways.
RHEL 5 for pre-R80.20 (either management or gateway).
For R80.20-R80.30, depends on the precise image used.
According to @PhoneBoy post, you should probably use Readhat Linux flavour for the virtual machine.
Hardening Guide is not available for R80.40, but according to the Gaia R80.30 Hardening Guide:
Check Point Gaia R80.30 has two flavors, one based on Red Hat Enterprise Linux 5.2 with 2.6.18 kernel version, and the other based on 7.4 with 3.10 kernel version.
As R80.40 supports only the 3.10 kernel for all Security Gateways and Appliances this would be Red Hat Enterprise Linux 7.4 with 3.10 kernel.
RHEL 7 is the recommended choice for R80.20+ Management, R80.40+ Gateways.

Does this imply that the vmware tools can be installed?
A version of openvm-tools is included in Gaia.
You cannot install/update this.

sk104848 provides the best practices but other than this no per sk61684.
It’s baked into the OS image and should be activated by default when installed in the relevant environment (VMware).
R81 support 2.6.18 kernal for open server ?
No. Starting R80.40 everything is based on kernel 3.10
