My packets dont get through my NAT

I set a policy that is letting packets go through from a certain segment to another, and it is supposed to apply https inspection and NAT. The packets don't go out of the FW machine, and looking at the logs, it seems like it does not apply the HTTPS inspection and doesn't apply NAT (All we see for each request is the policy accepting the packet).

Any ideas for reasons why that might happen?

You've not provided a lot of information here.
A small network diagram would be helpful, along with your version/JHF level.
Screenshots of what you've configured and logs you've received might be helpful. 
Have you use tcpdump and/or fw monitor to confirm packets are even flowing through the gateway at all?

I agree with phoneboy...we need way more details to try figure this out. Did you run any captures on the firewalls (such as tcpdump or fw monitor) to see what might be happening with the traffic? I think screenshots of those logs would also be helpful.

Since when are you experiencing the issue?

What is the source and destination?

Have you tried to do a traceroute or confirm connectivity from another internet service like personal hotspot or access the site using the IP address example: https://<hostip>:443
