It's not been certified at this stage. The HCL will be updated if/when it is.

At the moment, yes.
I expect that will change in the near future.
I am not aware of any specific issues using ESXi 8.

Thats where I set up my lab and worked fine. No clue if its officially supported, but it does work.

I presume it's merely verifying in QA that R81.20 (and possibly earlier releases) work on ESXi 8.0.
