Define a new Star Community - this is a manual configuration as you will have to choose the center GW(s)...

As Gunter said, you need to define new community. I know this subject came up LOTS even in old days of CP, but from my recollection, dont believe there was ever a way to convert from one type of community to the other.

There will never be a way as the topologies are completely different: In Star community, one or a mesh of central GWs communicate with the Satellite GWs using one of the three VPN routing possibilities. In Mesh Topo, all GWs are equal and all communicate with each other. The other way around is thinkable: Take all GWs from a Star Topo, remember the VPN settings and make a simple mesh of all GWs. But not this way...
