If monitoring blade is activated you can create a custom report in smartview monitor (logs and monitor -> new tab -> "Tunnel & User Monitoring"). There should be a report named "Top Interfaces" that might already give you all the information you want. Alternatively the command cpview can be configured to save past states "cpview history on" and then "cpview -t". Use "+" and "-" to move from snapshot to snapshot. Check past peak values in "network.interfaces.traffic".

If you want to do it in cpview, history mode needs to be enabled.
See: https://supportcenter.checkpoint.com/supportcenter/portal?eventSubmit_doGoviewsolutiondetails=&solutionid=sk101878
