I am looking for a sk or document to upgrade the cloudguard firewalls from R80.30 to R81 in Azure as well as AWS.

Can someone please point me?

Typically in public cloud the approach until now has been to deploy new gateways and move the traffic. Refer sk173635 / sk162365

As indicated above IPU functionality is also coming soon for Azure Gateways.

Is there an ETA on the IPU functionality for Azure gateways?

It's unfortunate an IPU path for versions < R80.30 aren't supported.
We have a few AWS and Azure Cloudguard gateways on <= R80.10 that we need to upgrade.

There are some differences between CloudGuard R80.30+ and earlier versions that make an in-place upgrade not feasible (specifically differences in kernel version and filesystem used).
